ReplyDeleteThere is, in my mind, no finer meal than a piece of pate, a handful of caper berries, and a piece of sharp, fruity cheese with a glass of Chateau Rieussec, 99 or 97, followed by a poached pear drizzled in coffee sauce.
ReplyDeleteThe restaurant where I used to go to collect said meal a few times a year is, sadly, no more.
I've found smoked meats and sausages go well served with pickled veggies. Makes for a nice contrast in flavors.
ReplyDeleteThe French have a way of making awesome things make no sense. We do our own charcuterie. Around here, we just call it "smokin' sausage" :).

On another completely (well, mostly) unrelated subject. I understand you are a beer connoisseur. I owe a friend who likes IPAs. What is a good recommendation? Stone? Ruination? Some other more obscure brand?
