It tasted like pure nomminess.

So the other evening, Bobbi fried up some bacon & egg sandwiches, and cooked a few slices of my pancetta to throw on them. That was the first time I'd eaten it fried up like bacon, believe it or not.

Oh. My. God. It was like bacon, only baconier; the platonic ideal of nomminess.

Yesterday afternoon I fried up the remainder and ate it on crispbreads with provolone. I'm going back to Fresh Market today for more.

Something...more bacony than bacon? I've dreamed of this before, but thought that I was merely being blasphemous.

I liked your post enough to make myself two (yeah, two. Got a problem with that?) fried egg sandwiches on whole wheat, with thin-sliced onion, bacon, and sliced vine-ripened tomatos (lightly salted) and Extra Sharp aged white cheddar.

So. Good.

Try it over pasta with Alfredo sauce, I like mine with fresh baby peas and oyster mushrooms tossed in as well, being in a local farm food co-op has its benefits out here in flyover country. Oh man, now I feel hungry again.
